Gluten Free Honey Chocolate Granola Bars

Introduction
This recipe originally came from a cooking book I had bought for my son. I substituted gluten free oats so our entire family could enjoy them. Feel free to play around with the recipe and let me know what you think! Adding in some peanut butter instead of honey or even using peanut butter chips might be tasty options.

Steps
Butter an 8-inch square baking pan and set it aside.
Melt 3 tbsp butter in a large pot over medium heat.
Once butter is melted, add in brown sugar, honey and vanilla extract.
Whisk butter, brown sugar, honey and vanilla until sugar is dissolved.
Remove pan from heat and stir in cooking oats until well mixed (~ 5 minutes).
Pour the oat mixture into the buttered glass pan and press down.
Press chocolate chips upside down into the oats.
Chill for an hour. Cut into squares or rectangles for serving.

1/3 cup packed light brown sugar
1/4 cup honey
1 tsp vanilla extract
3 cups gluten free quick-cooking rolled oats
1/4 cup chocolate chips
